The apples are delicious but in the winter eating them raw worsens the Vata dosha which is already put to the test with cold and changing temperatures and strong winter winds of the season. Here is a simple recipe to appreciate apples even in winter. Very easy to make, it is an ideal snack ideal for the return of children's school.
The spices used in this recipe warm the body, promote good digestion and circulation. This recipe is tridoshic, that is, it can be consumed by all, no matter doshas.
2 - 3 apples, peeled and quartered
(I used golden apples for this recipe)
1 tbsp. of ghee
3-4 pods of cardamom grinder
1/2 tbsp. ground cinnamon
1 piece of 2 cm fresh grated ginger
1 tsp. Water
1 pinch of unrefined brown sugar
Grated nutmeg to taste
In a saucepan, heat the ghee over medium heat.
Meanwhile, grind the cardamom seeds (without the bark).
Add the ground cardamom seeds and the cinnamon to the warmed ghee.
Add the apples and stir.
Add the grated fresh ginger to the mixture and stir.
Add the water and the pinch of sugar. Stir.
Serve immediately with a little grated nutmeg if desired.
Note: If Pitta is aggravated, decrease the amount of ginger and cinnamon. If Kapha is aggravated, increase the amount of ginger and use less sweet apples.
